Assigned watering days are mandatory here, and the number of them changes four times a year. Most of the water wasted in a Las Vegas yard is wasted by a clock nobody reset.
Short answer
Watering groups are mandatory for every municipal water customer in the Las Vegas Valley. You get six assigned days a week in summer, three in spring and autumn, and one a week through winter. Sunday watering is prohibited year round, and no sprinkler may run between 11am and 7pm.
The schedule
The Southern Nevada Water Authority sets mandatory seasonal restrictions, and your assigned group decides which days you get. The group is printed on your monthly water bill.

Two rules that apply all year
Sunday watering is prohibited, whatever your group.
No landscape irrigation between 11am and 7pm. In a Las Vegas summer most of what leaves a sprinkler head in the middle of the day evaporates before it reaches a root.
Running sprinklers outside your assigned days counts as water waste and can attract a fee or citation.
Why this catches people out
The schedule changes four times a year, and an irrigation clock does not know that. A controller set for summer and left alone through November is watering six days a week when one is allowed — which is both a citation risk and a genuinely large amount of water.
The fix is unglamorous: reset the controller at each seasonal change. If a yard is on regular maintenance, that reset is part of the visit rather than something you have to remember.

It is on your water bill, and the water district publishes a lookup by address. Worth checking rather than guessing — the groups do not follow street layout in an obvious way.
